When you get home from holiday and there's nothing in the fridge

Holidays are over!

We've all been there. You've been away on holidays for a week, 2 weeks, 3 weeks, whatever. In this case, it was 12 days for us.

You've been to lots of nice restaurants for lunches or dinner. Whether it's some of your favourite restaurants and newly discovered ones, most of us tend to eat out a lot while on holiday. Those going all inclusive, even more so, as all meals are served to you, so saucepans, spills and serving bowls are something that does not concern you. Hot and tasty meals arrive to your table day after day, meal after meal. Delightful.

We weren't quite that fortunate and I'd say of the 12 full days away, we ate breakfast out only once, lunch around four or five times and dinner eight or nine times if memory serves.

It's one of the best things about holidays for me. Lots of eating out and not too much cooking or clean up. When there is cooking for doing, I do the majority when we're away, so that my wife gets a good well earned break from it. When we are all working and kids are in school, she cooks 75% of the time, so fair is fair. I actually like to cook too, but I'm often working until after 6pm, so it just makes sense for her to cook when she finishes earlier.

Muster Time

Alas, all good things must come to an end however. Holidays are no different. They ended for us yesterday and we had an early morning flight at ridiculous O'Clock which meant up at 3am and out of the apartment by 4am and arrival at the airport at 5am. Then a 3 hour flight, 15 minute taxi run and a two hour thirty minute drive back to Galway, with a 40 minute stopover near Athlone to charge the ID4.

You arrive home and there isn't a stitch in the fridge for dinner.

Time for an Ablaze Muster special!! I'm pretty handy at mustering it must be said.

I had a tin of tomatoes, dry spices, a frozen chicken breast, frozen parsnips, frozen onions and frozen peas.

I give out to herself about these freezer vegetables she buys, as I much prefer fresh produce, but I have to admit in this instance they came in very handy.

Step 1

I first set the oven to 180 degrees Fahrenheit and when it was ore heated, in went the chicken breast.

Step 2

After around, ten minutes I added the parsnips and they would be ready along with the chicken in around twenty minutes.

Step 3

Now I needed a sauce, so I started to fry the onions, amd added the following spices in the photo below.

Step 4

After four minutes I added a few squirts of Sriracha sauce for a bit more kick.

Step 5

Nearly there now, I put some frozen long peas on the boil for around six minutes.

Step 6

Ding ding ding went the oven timer. Time to serve up. Not too shabby for a muster dinner.

My wife and I just went through the same thing. We ended up getting Chinese food and bringing it home because I have been craving it for a while!

Yep, we often do that too, but we've eaten out loads lately, so was also trying to be a bit healthier 😀

I hear you! We made sure to fit in some home cooked meals on our recent trip so we weren't eating out every meal.

Hope you got enough rest during the holidays. Getting to eat outside and enjoying the wife during the vacation is a must. I would say it’s not bad that you could manage to cook something last minute and keep on the dinner table.🥘 I bet the flight and the trip back was really exhausting.

I always come back from holidays tired, but luckily I got back on a Thursday, so had a few days to reaclimitise before going back to work today!

Mustering must be a talent for you...

Hello! I fully understand what it is like to travel and arrive, to be very tired, but the hunger is greater than the tiredness. Resorting to the most practical is the best, so I would be happy with a dinner like this, it looks delicious. Thanks for sharing.
