For our lunch today, mama prepared one of my favorites which is sinigang using lots of tomatoes to make the soup naturally sour. We used pork as the main ingredient and had some leafy vegetables, squash and sweet potatoes.
Recently, potatoes are kind of pricey, so we often use sweet potatoes when cooking. I also sometimes air fry sweet potatoes because I've been avoiding eating potato chips and the like these days. They can still be quite tempting, but I've been resisting well so far. haha
This was the sinigang we had for lunch. It was so delicious. The color is so orange that I could include this for my ASEAN community challenge post this week. (Still looking for other orange stuff, though.. haha)
The reason why it looks like this was the tomatoes and squash. It was so delish.
We enjoyed the hot soup on a hot day. Yes, this is Filipino style. haha However, I wanted to feel refreshed as well, so I checked the fridge for something to drink aside from water and remembered something!
The last time papa and I went grocery shopping, we discovered that the supermarket we frequent started selling this ginger beer. (It's non-alcoholic.) I really like this product, but it wasn't available anywhere except online, so the last time I had this was a couple years back.
We couldn't buy that time because our budget was just enough for the usual groceries, but papa actually bought one earlier this week. So, I took out the ice cubes and shared this bottle with my parents.
Ginger beer, sinigang and brown rice is quite an unusual combination even for me. We enjoyed it, though. I was super energized to work today!! Before lunch, mama and I watched One Piece Red on Netflix, so I was extra high today. Me and my anime addiction + unusual lunch combination!!! XD
And my little friend here was also very excited to take the small piece of spring onion I placed on the side of my plate. hahaha
I'm done with my classes today and it's almost 1AM. It's time to hit the sack... after a few minutes(?) of mobile gaming. See you around! (^^,)/
