It was my mama's birthday last Tuesday. We didn't have a huge celebration, but we prepared some delicious dishes to celebrate her special day. Since it was on a weekday, my cousins and aunts couldn't come. We just chatted online and my paternal grandma gave us a call and celebrated with us despite the distance.
I asked mama what she wanted to have on her birthday and she told me that she has had a craving for a certain fish dish that she used to cook back then. The fish is a bit pricey compared to the others, so we don't usually buy it. However, it's a day to celebrate, so I decided to buy all the ingredients for us to share.
Here are the dishes we shared that day.
It was quite a simple set of dishes, but we all enjoyed it. Our tummies were literally full that we had to exercise more later that day! hahah
This here is one of mama's specialty dishes. It's a sweet and sour dish. The first time she cooked this was when I was in elementary school. In our school, parents were hugely involved in the activities that there are competitions held for them to join.
She joined the cooking competition with the other parents in my grade and this was the dish she prepared. They won the first place and everyone enjoyed all the dishes prepared by the parents.
I'm not that keen on cooking, but I enjoy the preparation phase, so I helped her in preparing all the ingredients so all she had to do was her magic. :)
Papa prepared a bunch of chicken fillet as well. There's another container of this which we set aside for dinner and following meals.
Whenever papa cook some chicken fillet, mama would create this white sauce for us to dip the chicken in. It's really very tasty and creamy, so I always joke around saying, "Pasta na lang ang kulan!" which means "All that's lacking is the pasta."
We didn't have any type of pasta in stock, so papa took out some pancit canton from the store and boiled the noodle to make it my pasta. hahah I'm so happy!!!! The white sauce made the noodle extra yummy! (We discarded the seasoning but kept the oil and soy sauce pouch for future use. lol)
As they were both busy in the kitchen outside, I also did my part in cooking. haha I prepared our rice in our indoor kitchen. We usually shift from brown to red to black rice. Sometimes, we have corn grits. However, during mama's birthday, we prepared some delicious black rice. <3
Apart from the rice, I also baked a choco-banana cake that mama requested. Unfortunately, I couldn't take a photo of it because we consumed it soon. Well, I made a couple small batches, but still failed to commemorate it. lol Anyway, I'll just share my recipe next time in my Air Fryer Diaries series.
It was just my parents, Arashi and I, but we had a great time celebrating. I'm glad that mama's condition has become better and I hope it continues to do so. We'll still go on with our lifestyle change, so we could live healthily and happily in the years to come.
